Making Sausages
Everybody is a sausage maker. If you can make a hamburger you can make a sausage. Sausage is nothing else than chopped or ground meat to which some spices are added and which is subsequently stuffed into a casing. There are those that even don't bother to stuff it and call a hamburger the sausage. Take for example McDonalds McMuffin Sausage which is served for breakfast. It is a meat patty served on a bun, yet called sausage.
The basic rules for making a good sausage are simple:
1. Use fatty meat. About 70% lean meat and 30% fat trimmings make a great sausage. A pork butt's composition naturally conforms to this requirement and that is why it is the preferred meat cut for making sausages. It is inexpensive and available everywhere. Sausages are more forgiving when it comes to meat quality as the action of chopping meat with a knife or grinding it with a grinder mechanically tenderizes the meat.
2. Add salt, pepper and spices of your choice. Remember you are making a hamburger. You are the sausage maker now, use what you and your family like. After all you will eat your product.
3. You can add different fillers to your sausage mass and you will get more product for your money. People in Sweden like to add potatoes, other people add bread crumbs or oats, cooked rice is included in sausages all over the world. Throw in two egg whites to each 1 kg of sausage mass and everything will bind beautifully.
Process:
1. Chop meat with a knife into 3/8" pieces. We have been chopping meat for sausages for a thousand years so why not now. If you are fortunate enough to own a grinder, grind the meat. You can use a food processor but the texture of your sausage will be very fine, a kind of hotdog.
2. Mix chopped/ground meat with all spices together. Take your time and use some force. It is a combination of mixing and kneading, almost like making dough.
3. Stuff into suitable casings or do it the ingenious way as is done by poor people in some South American countries. Get some cellophane cooking sheet, roll the meat inside and lace across every two inches with a cotton string (butcher twine). This creates short sausage links although they still remain part of a longer sausage. You could finish the process right here and place your fresh sausage into the refrigerator. Then it will have to be fully cooked before serving by boiling in water or frying on a pan.
4. Place into a pot with hot water and keep the water temperature at the boiling pot. Allow 10 minutes for ½" of sausage diameter. In most cases it will be 20-30 minutes cooking time. Your sausages are done and they will taste better than the ones from the supermarket.
Note: this is a cooked sausage and it is ready to eat at any given time. It has to be refrigerated.
